It would be an interesting experiment to see if you could taste a difference in the final result when you brown first, but not after; brown both first and after; and just browned after. I’m really picky with my Mexican food. I know a lot of people eat their meat straight from the Instant Pot and don’t bother with this last step, but I HIGHLY recommend it!
